Terri Elizabeth Chapman joined the Poe team as a nutrition health educator in January of 2016. As a career-changer, she is obtaining her Master’s degree in nutrition from Meredith College with the desire to become a registered dietitian (RD). While her professional goals involve working within the realm of perinatal and pre-conception nutrition, and lactation, her role at Poe is exciting as it allows her to share her passion of teaching others how to care for themselves with the use of “food as medicine”. Terri Elizabeth’s nutritional philosophy is strongly impacted by her desire for making healthy choices regarding individual dietary patterns. The idea that negative health consequences can be thwarted through wellness drives her to educate others about food. To quote Hippocrates, “Let thy food be thy medicine, and thy medicine be thy food”.

Terri Elizabeth has been very happily married to the man of her dreams, Clinton, for the past 8 years. A little baby boy just joined their family last September who is the apple of their eyes!  They live in deep in the woods of Chatham County, NC.
