Caitlin Griffin (“Cati”) graduated from Meredith College with a double major in Psychology and Spanish in May 2011. While completing her undergraduate degree, she studied abroad for ten months in Argentina and became fluent in Spanish. When she returned from study abroad, Cati pursued various volunteer and internship opportunities in order to utilize her bilingual capabilities in educational outreach for the Latino community in North Carolina.

Cati joined the Alice Aycock Poe Center for Health Education as a Bilingual Health Educator in October 2011. At the Poe Center, Cati primarily assists with Latino outreach in the areas of nutrition and physical activity, but she is also learning dental health, drug prevention and general health education programs. She enjoys translating and delivering existing Poe Center curriculums in Spanish so as to impact a more diverse audience.

Cati enjoys expanding her personal knowledge in all areas of health education and appreciates the variety of her weekly tasks at the Poe Center. She loves instructing both students and adults of all ages and seeing her own and her coworkers’ actions transform North Carolinians into healthier, happier citizens.
