Farmers Market Vermicelli Peanut Noodles
Serves: 4
Cooking time: 30 minutes
Equipment: Large pot, tablespoon, teaspoon, measuring cup, knife, cutting board, mason jar or sauce container, strainer
Ingredients
Peanut Sauce
Ingredients
1 garlic clove, peeled and minced
1 teaspoon finely-chopped ginger root
1 Tablespoon sesame oil
2 Tablespoons low-sodium soy sauce
2 Tablespoons warm water
1⁄4 cup peanut butter (if case of peanut allergy, substitute peanut butter for cashew, almond, or sunflower butter)
Optional add-ins:
1 teaspoon fish sauce
2 Tablespoons toasted sesame seeds
Veggies & Noodles
Ingredients
1⁄2 bunch scallions, chopped
1 cucumber, cut into matchsticks
1 carrot, cut into matchsticks
Lettuce, roughly-chopped
1 package of angel hair rice noodles (also known as vermicelli)
Or use three in-season vegetables of your choice

Instructions:
- Fill a large pot with water and place on the stove. Set heat to high. Bring water to a boil.
- While the water is heating, put garlic, ginger root, sesame oil, low-sodium soy sauce, warm water, and peanut butter into a jar or bowl and mix until smooth.
- Put noodles in the boiling water for two minutes.
- Drain noodles into a strainer and run cold water over the noodles to chill.
- Put noodles, vegetables, and sauce in a bowl. Top with scallions and toasted sesame seeds. Enjoy!
