Community Spotlight: Fast Facts & A Farm Tour with UCAN

Urban Community AgroNomics, known as UCAN, has been “Growing Communities One Seed at a Time!” since 2016. UCAN empowers Durham families with access to resources to grow their own healthy food using sustainable practices in a supportive environment.

UCAN’s historical land hosts The Catawba Trail Farm and community garden. Join our expert health educator as they tour UCAN and learn about how UCAN is fighting food insecurity in Durham.

UCAN works in partnership with Farmer Foodshare, Carolina Farm Stewardship Association, and The Society of St. Andrew to distribute produce and eggs in Durham County.

Black Bean Salsa Fresca

Ingredients

1 can black beans, no sodium added
1 can corn, no sodium added
2 tomatoes (or 1 can diced tomatoes)
1 bell pepper (color of choice)
1⁄2 red onion (optional)
1 cup chopped fresh cilantro
1 lime, juiced
Salt to taste

Directions 

  1. Open the black beans and corn. Place into the colander and rinse well.
    Dice tomatoes, pepper, and onion into small pieces, uniform with the
    black beans and corn.
  2. Place black beans, corn, tomatoes, pepper, and onion in a large bowl
    and mix until combined.
  3. Finely chop cilantro. Combine into the vegetable mixture.
  4. Add the lime juice to the mixture and stir to combine. Sprinkle desired
    amount of salt and stir.
  5. Place in refrigerator until serving time.
  6. Serve as a dip with tortilla chips, or as a topping on tacos.
